Figure Food: Baked Oatmeal To Go!

I love making these delicious oatmeal-style muffins! They are quick to satisfy my stubborn sweet tooth and any sugar cravings! I like to add unsweetened shredded coconut and a few dark chocolate chips- yum!

◾2 eggs
◾1 tsp. vanilla extract
◾2 cups applesauce, unsweetened
◾1 banana, mashed
◾6 packets of stevia or 1 & 1/2 tsp. stevia powder or 1/2 cup honey
◾5 cups old fashioned rolled oats
◾1/4 cups flaxseed meal
◾1 tblsp. ground cinnamon
◾3 tsp. baking powder
◾1 tsp. salt
◾2 & 3/4 cup milk
◾Optional toppings: raisins, walnuts, chocolate chips

◾Preheat oven to 350 degrees
◾Mix ingredients well in large bowl
◾Spray a 12 & 6 capacity muffin tin with cooking spray (I use coconut oil spray) or use cupcake liners!
◾Pour mixture evenly into muffin tins cups
◾If using topping- add them on top of muffins now

Bake for 30 minutes or until a toothpick in center comes out clean. Can be frozen for later! 🙂
