Fit & Fresh Summer Salads!

I absolutely adore Summer and all the fresh fruit that becomes plentiful during the Season. This is a picture of one of my favorite Summer Salads!

At first I cringed at the possibility of adding fruit to a veggie salad. I didn’t know how the sweetness would blend with the bland and bitter veggies. However, it is probably one of the most healthful, flavorful things you can add to your salad!

Pictured above is a Spinach Strawberries Chicken and Burrata Salad. The sweetness of the strawberries and creaminess of the Burrata (an Italian form of mozzarella cheese) developed a “sort-of” dressing for the salad, so I didn’t have to worry about the extra calories from a salad dressing ruining my healthy lunch!

The recipe is pretty straight forward:
Baby Spinach
(1) Burrata “ball”
(4) Strawberries, sliced
(3oz.) Chicken breast, shredded
Drizzle of ev olive oil
Season to taste (I used Italian seasoning, salt, pepper & fresh chives!)
Squeeze half of a lemon on top for added flavor!
