Yesterday I made a quick, easy & tasty lunch!
Tortilla-less Chipotle Chicken Quesadillas:
1/4c. Shredded Mexican Cheese
6oz. Canned Chicken Breast
Chipotle Mexican Seasoning
Hot Sauce (optional)
1tbsp. Coconut Oil or Olive Oil
1. Sauté chicken breast with oil & seasoning in skillet until slightly brown
2. Sprinkle cheese & hot sauce (optional) on top
3. Dive in. 🙂

3g carbs – 26g fat (14g from healthy fats) – 32g protein
Low carb, high protein, good fats… AND it tastes like a yummy quesadilla without the added carbs!? Great meal!
